Introduction to Advanced Meat Alternatives

This module for graduate-level students will explore how sustainable alternatives to conventional meat can mitigate issues of climate change and food safety, and give participants an understanding of the three principal technologies in the alternative protein field: cultivated meat, plant-based protein, and fermentation. A similar module was offered in late 2021 to undergraduate students at Singapore’s Nanyang Technological University, which was itself the first of its kind in Southeast Asia. That module was also developed in collaboration with GFI APAC.
