Alternative protein is a new domain within the food system that is rapidly emerging. The market share for alternative proteins has significantly increased in the past decade. Food companies, investors, researchers, and college students are keen to dive into the alternative protein industry in China yet are hindered by the knowledge gap between existing food research and production and the rising alternative protein industry. The GFIC Alternative Protein MOOC (谷孚新蛋白公开课) is a Chinese-language online course that will introduce researchers and college students to the state-of-art technologies as well as the most cutting-edge research of alternative protein manufacturing. We will begin with an overview of introductory alternative protein concepts. Next, we will move into the chemistry, food processing, and the innovations of three pillars of alternative protein: plant-based meat, cultivated meat, and fermentation. Finally, we will introduce the sustainability implications and the current industry and investment landscape. This course is available on Xiao-E-Tech, a Chinese online learning platform.
