My research is focused on the engineering of fermentative organisms to produce assorted target compounds/products. Recently, I am looking to pursue: A. The engineering of select bacteria to produce proteins that can be used to improve the characteristics of alternative proteins B. The engineering of target organisms to produce compounds used to formulate alternative proteins C. Isolating, characterizing and engineering bacterial and yeast species for efficient conversion of plant biomass and food wastes into alternative protein ingredients.
