We are working on the presence of the inorganic contaminants such as Al, As, Cd, Pb and Hg in plant-based meat products; the arsenic species; the bioaccessibility of inorganic contaminants using in vitro gastrointestinal digestion and to provide essential information concerning these contaminants to the regulatory process for plant-based meat products in Brazil.
