I am working on the development of edible scaffolds via crusting fabrication. The non-chemical and non-machine intensive nature of crusting fabrication theoretically provides more inexpensive and safer option as scaffolds for cultured meat production. I am also involved in other aspects of cultured meat production such as in serum-free media development, cell line establishment, and product development.
