We are working on protein extraction characterization and functionalization. Extraction, characterization, process development, technofunctional properties improvement, and digestibility of macroalgae proteins and polysaccharides toward animal product analogs. 1. Alga based fish analogs 2. Agriwaste upscaling to form alternative protein foods In addition, I am leading the Technion “Sustainable Protein Research Center”, a multidisciplinary center coordinating and promoting campus-wide research activities in alternative protein, supported by GFI.
