My research focuses on developing insect cell lines as ingredients for cultivated meat products. In the past, I have focused on generating cell lines from caterpillar embryos and studying them as an alternative fat ingredient. More recently, I have focused on scaling embryonic insect cells in single-cell suspension in animal-free media and studying their resiliency, nutritional properties, and sensory properties.
