We are working on developing novel and sustainable plant protein extraction strategies from underutilized plant resources and byproducts. Another key focus of our research is the development of fat mimetics to replace dairy and other animal fats using plant proteins or oils. These innovations are being applied in a variety of plant-based food products, including whipped cream, beverages, and meat analogs.
