My research focus is in alternative proteins and protein-based ingredients (e.g. hydrolysates). With a molecular and analytical background, my focus is in qualitative and quantitative characterization of proteins in biomasses and extracts and using this to understand and predict functionality. I focus a lot of work on developing methods for characterizing and AI-based predictive tools for predicting properties on the peptide level – linking structure to function and bioactivity.
