Our plant protein research platform at the North Dakota State University focusing on improved flavor profile, functionality and nutritional quality of plant proteins isolated from pulses, cereal and oilseeds including pulse proteins, oat protein, flaxseed protein and hemp protein by means of physical, chemical, and biological modifications. It is hoped that the outcomes of this research will lead to higher usage or consumption of pulse, cereal and oilseed crops to partially replace meat consumption.
