The Fichman lab focuses on developing advanced bioinspired materials for food and healthcare applications, operating at the intersection of chemistry, biology, and materials science. Our research harnesses self-assembly processes to design functional biomaterials, including both peptide-based and hybrid polysaccharide/peptide systems, which we characterize across nano-, micro-, and macro-scales. A primary focus of the lab is the design of scaffolding materials for cultivated meat production, alongside the development of gels with a range of functional and mechanical properties. Additionally, the lab investigates the creation of innovative films, adhesives, and emulsion stabilizers, aiming to address diverse challenges in the food and biomedical fields.
