I’m currently working novel proteins (e.g. microalgae, plant protein, insect protein), particularly insect protein. My work focuses on the nutritional quality and health benefits of these proteins. It includes protein human gastrointestinal digestion and gut fermentation in terms of nutrients and bioactive compounds (e.g. bioactive peptides, or allergen epitopes) release, and health benefits for gut microbiota and host body.
