Currently, my group is focused on the study of the nutritional value of health benefits of alternative sources (vegetal, microalga, insects). We carry out extraction of potential bioactive compounds, their characterization through proteomics and functional analysis and the evaluation of the bioactivity, bioavailiability and mechanisms of action through biochemical assays and cell models.
