I work actively on proteins and peptides derived from alternative and sustainable sources and their digestibility, bioavailability, functional characteristics, allergenicity, and biological activities. I plan to work with collaborators in the area of generation of plant based proteins and peptides and their interactions with other molecules to improve their digestibility, bioavailability, functional characteristics, allergenicity, and biological activities.
