I investigate protein extraction methods from non-conventional (i.e., emerging or alternative) protein sources such as edible insects, chia seeds, canary seeds, hemp seeds, etc. I also study the effect of these protein extraction methods on the protein’s techno-functional properties, allergenicity, and biological active properties derived from the protein’s peptides. These bioactive properties include their effect towards preventing hypertension, type-2 diabetes, oxidative stress, obesity, inflammation, among others.
