We´ve worked on filamentous fungi engineering to produce a robust cell factory for the production of alternative proteins such as beta-lactoglobulin, albumin, lactoferrin, ovalbumin, and others. To do that, we have combined synthetic biology and omics data to identify the cellular limitations for producing high titers and yields of alternative proteins.
