My research focuses on purifying, identifying, and structure-function analysis of proteins and peptides derived from sustainable sources. Health impact and nutritional applications of plant-based proteins in order to promote sustainability and improve public health by lowering the risk of chronic diseases, especially hypertension and diabetes. Additionally, I am dedicated to investigating sustainable processes and green technologies to enhance plant-based proteins digestibility and bioavailability while reducing their allergenicity.
